Lemon meringue pies are my absolute favorite dessert, however I find making an entire pie for just myself a little excessive. So when I found this recipe for mini pies I knew it was the perfect solution! Unfortunately I didn't have a chance to properly photograph the end result, so please excuse my Instagram shot! I should also mention that I used frozen Tenderflake pie crusts! (Shhhh)

ReplyDeleteA pie crust is a pie crust. You can buy them frozen and it's perfectly fine. Martha said so. And I LOVE, LOVE, LOVE lemon meringue. Also my fave. mmmm!!
